What are the holidays without some great desserts? One of my favorites is Tiramisu. The layers of ladyfingers dipped in coffee and liqueur and topped with mascarpone cheese is a dish fit for the special holiday times.
Tiramisu translates from Italian to mean “pick me up,” “cheer me up” or “lift me up”. What a fitting name for this beautiful sweet that cheers anyone up and makes them feel better.
1 cup warm water
1 tablespoon sugar
1 teaspoon instant espresso powder
¼ cup coffee liqueur
2 (3 oz) packages soft lady fingers
¾ cup condensed milk
8 oz mascarpone cheese
1 ¼ cup heavy whipping cream
1 teaspoon vanilla
¼ cup cocoa, to decorate
½ chocolate curls, to decorate
Combine water, sugar and coffee. Stir until dissolved, then add the coffee liqueur. Beat the condensed milk with the mascarpone until well mixed. Add the whipping cream and vanilla and beat until soft peaks form.
Dip each lady finger in the coffee and lay in square pan until the bottom of the pan is covered. Cover the lady fingers with half of the whipping cream mixture. Repeat with another layer of dipped lady fingers. Cover this layer with the remaining whipped cream mixture. Sprinkle the cocoa powder and decorate with the chocolate curls. Refrigerate for a couple of hours before serving.
